Chrissey Lou’s Pasta Salad is a classic macaroni salad with creamy dressing, eggs, olives, celery, red onion and chives.

My husband’s mother made the best pasta salad. I wanted to re-create that nostalgic food memory for him with this pasta salad. My recipe features large elbow macaroni and she used the smaller macaroni, but other than that he says it tastes just like it! I call that a WIN.

Ingredients in Chrissey Lou’s Pasta Salad
- Elbow Pasta – Either small, as she used, or large pictured here.
- Celery – Fresh sliced celery.
- Red Onion – Finely chopped red onion.
- Chives – Fresh chopped chives for garnish.
- Eggs – Chopped hard boiled eggs.
- Olives – Medium size black olives.
- Mayonnaise – Homemade or Hellmann’s or Best Foods.
- Mustard – Yellow mustard.
- Vinegar – White vinegar.
- Seasonings – Onion powder, sugar, salt, pepper and paprika.

Chrissey Lou’s Pasta Salad
Ingredients
- 3 cups elbow pasta
- 3 stalks celery diced
- 1/4 cup red onion minced
- 1 can black olives sliced
- 4 hard boiled eggs chopped
- 1/4 cup fresh chives (save a few for garnish) minced
- 1 tsp paprika for garnish
Dressing
- 2 cups mayonnaise
- 2 1/2 tbsp yellow mustard
- 1 tbsp onion powder
- 1 tbsp white vinegar
- 1 tsp granulated sugar
- 1/2 tsp black pepper
- 1 tsp salt
Instructions
- Place drained pasta in a large bowl. Fold in celery, red onion, fresh chives, , black olives and boiled eggs, Fold in dressing. Garnish with paprika and fresh chives. Refrigerate until ready to serve.
Dressing
- Combine all ingredients together until smooth and creamy.
