Mediterranean Rice with Castelvetrano olives, dried apricots, pine nuts, fresh basil, parmesan and brown rice.

Perfect for a side dish served with grilled chicken, fish or even kabobs. The earthiness of brown rice pairs very nicely with a few simple, but key ingredients. If you haven’t tried Castelvetrano olives, you are in for a real treat. They are smooth and buttery. I keep a jar on hand in my pantry for recipes like this or to add as a pizza topping. In fact, the ingredients in this rice are all ideas from my favorite wood fired pizza.

  • Rice – Brown rice gives this dish a nutty flavor.
  • Broth – Chicken broth adds a layer of flavor.
  • Olives – Castelvetrano olives are smooth and buttery.
  • Apricots – Dried apricots sliced in strips.
  • Pine Nuts – Add texture and a creamy, nutty bite.
  • Basil – Fresh basil.
  • Parmesan Cheese – Freshly grated parmesan cheese.

Ingredients
  

  • 2 cups brown rice
  • 4 cups chicken broth
  • 1/2 cup Castelvetrano olives
  • 1/4 cup dried apricots sliced in strips
  • 1/4 cup pine nuts
  • 1/4 cup fresh basil chiffonade cut
  • 1/4 cup parmesan cheese freshly grated
  • salt and pepper to taste

Instructions
 

  • Bring chicken broth to a boil over high heat in a small pot with a lid. Stir in rice, reduce heat to medium-low and cover. simmer until broth is absorbed, about 20 minutes.
  • Fold in olives, dried apricots slices and pine nuts. Place in serving dish and garnish with fresh basil and parmesan cheese.
