Shallot Citrus Green Beans served cold after being quickly marinated in a light agave lime dressing with shaved shallots.

Fresh, crispy and perfect as a side dish. I like to make this recipe using fresh picked green beans. The taste is exceptional. You can use store bought, of course, but fresh is always first choice. The quick marinade coats the blanched beans and you get a perfectly coated crispy bite.

You can serve these green beans warm if you so desire. Just skip the ice water bath and coat with dressing immediately following the blanching process. Serve them as a side dish to your favorite protein.

Leave them in the fridge overnight and take them for lunch the next day. The retain their bite and the dressing has really soaked in for extra deliciousness.

Ingredients in Shallot Citrus Green Beans

  • Green Beans – Fresh green beans.
  • Shallot – Thinly sliced shallot.
  • Lime – The juice of one lime.
  • Agave – Agave nectar for sweetening.
  • Olive Oil – I like the flavor of olive oil, but you can sub your favorite.
  • Salt & Pepper – A pinch for flavor.

Ingredients
  

  • 1 bundle fresh green beans about 40 or so green beans

Agave Lime Dressing with Shaved Shallots

  • 1 lime juiced
  • 1 large shallot thinly sliced
  • 1 tbsp agave nectar
  • olive oil
  • 1 pinch salt and pepper

Instructions
 

  • Prepare a large bowl with enough ice water to cover green beans.
  • Heat a pan of enough water to cover green beans to a simmer. Drop your green beans in hot water. Blanch them for about 8 minutes. They will still be slightly crisp.
  • Remove from hot water and place in ice water bowl. Let them sit for a few minutes until completely cool.
  • Place green beans in a separate bowl and cover with agave lime dressing with shaved shallots. Refrigerate for at least 1 hour and up to overnight. Serve cold.
  • TIP: Can also be served warm. Just skip the ice bath and serve directly after blanching tossed with the agave lime dressing with shaved shallots.

Agave Lime Dressing with Shaved Shallots

  • Whisk together lime juice, sliced shallots, agave, olive oil, salt and pepper.
