Creamy Smoked Beet Toast with goat cheese, toasted pecans and balsamic hot honey drizzle on sourdough toast.

This appetizer gets a huge amount of flavor from slow smoking a variety of beets. Use your wood pellet smoker, such as Pit Boss or Traeger, to create an extraordinary depth of flavor. Beets are first quickly roasted then slow smoked to obtain that really smoked flavor. This step can be done a day or two ahead then store in the refrigerator until ready to serve. Â
I like using a variety of beets, such as red and yellow, for a variation in color. You can, of course, use whatever type you have on hand, but I like the look of different colors. Peel and cut the beets into large diced pieces before roasting and smoking to make things easier and to reduce roasting time.
When you are ready to serve, it’s easy to put together the goat cheese, balsamic drizzle and chopped pecans, making this a great make ahead recipe for dinner parties or special dinners at home.

Ingredients in Creamy Smoked Beet Toast
- Beets – One bundle of fresh beets. I like to use half golden and half red.
- Goat Cheese – Plain, creamy goat cheese.
- Sourdough – Petite baguette works great for a small appetizer size toast.
- Pecans – Toasted pecans add a nice crunch.
- Hot Honey – I like Mike’s Hot Honey. It adds just a touch of heat.
- Balsamic Vinegar – For the drizzle.
- Raspberry Jam – I use my homemade freezer jam, but any good quality jam will do.

Creamy Smoked Beet Toast
Equipment
- 1 wood pellet smoker such as Pit Boss or Traeger
Ingredients
- 1 bunch beets peeled, cubed
- 1 tbsp. olive oil
- 1 pinch salt and pepper
- 6 slices sourdough baguette
- 1 4 oz goat cheese log
- 1/2 cup pecans
Balsamic Hot Honey Drizzle
- 2 tbsp. hot honey
- 2 tbsp. balsamic vinegar
- 1 tbsp. raspberry jam
- 1 pinch salt
Instructions
- Preheat oven or air fryer to 400 degrees. Place beet cubes on a small sheet pan. Drizzle with olive oil and season with salt and pepper. Roast for 20-25 minutes or until fork tender.
- Preheat your wood pellet smoker to 225 degrees / smoke setting. Place beets on sheet pan in smoker and smoke for about 2 1/2 hours. * This step can be done a day or two ahead of time. Just store smoked beets in refrigerator until ready to use.
- When ready to serve, toast sourdough slices to warm. Place a spoonful of goat cheese on each slice, top with smoked beets and toasted pecans, finish with balsamic hot honey drizzle.
Balsamic Hot Honey Drizzle
- Combine hot honey, balsamic vinegar, raspberry jam and salt in a jar.
