Country Style Potatoes are thick sliced yellow potatoes fried in bacon fat for an extra crispy crust with red pepper, jalapeno and onion.

These are my go-to potatoes for weekend breakfast. I love how the bacon fat really crisps up the outside of the potato. Plus, it adds so much flavor. If you don’t store your bacon fat in the fridge like I do, just cook a few pieces of bacon in the pan, leave the fat and continue with recipe. Sometimes I even leave the bacon strips in the pan with the potatoes, peppers and onions.
If you’re thinking that jalapeno looks a little spicy and don’t want to add it in the mix, don’t worry. The jalapeno left whole has little to no spice, but if you cut it open, you will definitely feel the heat.

Ingredients in Country Style Potatoes
- Potatoes – Yukon Gold potatoes or yellow potatoes are perfect with a creamy inside.
- Bacon Fat – I save my bacon fat in the fridge, but you can easily fry a few pieces for this recipe and save the fat.
- Bell Pepper – Red bell pepper adds a nice flavor and color.
- Onion – Either white or yellow onion.
- Jalapeno – A whole jalapeno adds flavor without the heat. If you like it spicy, cut the jalapeno open.
- Salt & Pepper – Season with salt and pepper.

Country Style Potatoes
Ingredients
- 2 large Yukon Gold potatoes sliced 1/4 inch thick
- 1 large spoonful bacon fat
- 1/2 red bell pepper large chopped
- 1/4 white onion sliced
- 1 jalapeno whole
- salt and pepper
Instructions
- Prepare a steamer basket. Place sliced potatoes in basket and steam until you can almost pierce with a fork, but still a little hard. This process helps the potatoes fry up faster. If you don't have a steamer basket, you can gently boil potato slices.
- Place a large frying pan over medium high heat. Add a spoonful of bacon fat. When melted, add red bell pepper, onions and jalapeno, cooking for about a minute or so. Push over to one side of the pan. Add steamed potato slices, so each slice touches the pan the best they can. Let them get browned and crispy then flip over, stirring together with peppers and onion. Cook until each side it nice and browned. Season with salt and pepper.
