Caramel Apple French Toast

Caramel Apple French Toast uses leftover French bread topped with caramelized apples, fresh whipped cream and walnuts.

Ingredients

French Toast

  • 4 slices French bread cut about 1 inch thick
  • 4 eggs
  • 1 cup milk
  • 1/4 cup confectioner's sugar
  • 1 tsp. cinnamon
  • 1 tbsp. neutral cooking oil, such as vegetable or avocado oil
  • 1 tbsp. butter

Caramelized Apple Topping

  • 4 tbsp. butter divided
  • 2 large apples sliced
  • 1 splash Malibu rum optional
  • 1/4 cup brown sugar
  • 1 tbsp. heavy cream

Whipped Cream

  • 1 cup heavy cream
  • 1 tsp. vanilla
  • 1/4 cup confectioners sugar

Instructions

French Toast

  • Whisk together eggs, milk, confections sugar and cinnamon in a large shallow pan with enough room to place 4 slices of French bread in.
  • Place French bread slices in egg mixture and let sit. Turn the French bread over every so often to ensure they are coated. Make the Caramel Apple Topping and Whipped Cream while the French bread soaks.
  • Place a large pan over medium high heat. Add about 1 tbsp. neutral cooking oil to pan. Place French bread in pan and cook until browned, flip, add 1 tbsp. butter to pan and brown on opposite side.
  • Remove French bread from pan to a serving plate. Top with Caramel Apple Topping and Whipped Cream. Garnish with chopped walnuts.

Caramel Apple Topping

  • Place 2 tbsp. butter in a small sauté pan over medium high heat. Add sliced apples and cook for about 5 minutes until softened.
  • Add a splash of Malibu rum to the pan, if using, stirring apples. Add remaining 2 tbsp. butter and 1/4 cup brown sugar. Continue to cook another 3-5 minutes until caramelized. Make the Whipped Cream while apples continue to cook. Once apples are cooked through, add 1 tbsp. heavy cream.

Whipped Cream

  • Whip together 1 cup heavy cream, 1 tsp. vanilla and 1/4 cup powdered sugar. I like to use my stand mixer with the wire whip. Make sure your bowl is cold for the best results. Store leftover whipped cream in the refrigerator for 1-2 days.
