Apple Bourbon Peach Filling
- 8 very large peaches pitted, peeled and sliced 3/4 inch
- 1 cup sugar
- 1/2 cup Jim Beam Apple Bourbon
- 1/4 cup flour
- 5 tbsp butter
All Butter Crust
- 2 ½ cup flour
- 1 tsp. sugar
- 1 cup salted butter, grated (2 sticks)
- 5-8 tbsp. very cold water
- Other:
- 1 egg blended with splash of water for brushing over crust
Apple Bourbon Peach Filling
Preheat oven to 400 degrees.
In a large bowl, combine filling ingredients (except for butter) and let sit while you make the crust.
All Butter Crust
Combine flour and sugar in a large bowl, crumble in grated butter, add cold water and form into a ball.
Divide into two, wrap in saran and refrigerate for at least 15 minutes.
Throw some flour on your board or counter and roll out dough. Place bottom piece in pie pan and mold edges. Fill with apple bourbon peach filling, dot with 5 tablespoons of butter and cover with top pie crust. You can make lattice strips or design if that makes you happy. Brush crust with egg mixture.
Bake at 400 degrees for 30 minutes, then reduce temperature to 375 degrees, cover crust with foil and continue baking for another 40 - 45 minutes. Remove from oven and let rest before cutting.
