Easter Dinner for Two

Make this intimate, citrus inspired Easter Dinner for Two with a menu of Kicked Up Tequila Orange Ham, Smoked Citrus Salad & Fennel Gratin, all in small portioned sizes.

When it’s just the two of you, create this easy-to-follow Easter Dinner for Two in just over an hour.  Transform a small smoked, pre-cooked ham with a sweet, citrusy glaze with a little kick from smoked paprika and chipotle. The benefit of cooking small is that it takes only 30 minutes to glaze and re-heat the smoked ham.  Look for a two pound ham like the one pictured from Safeway.

Smoked Citrus Salad features a variety of fresh citrus and butter lettuce drizzled ever so lightly with a lime, agave and smoked olive oil dressing. The smoked olive oil really accentuates the bright citrus and pairs well with ham.

Ingredients

  • Smoked Ham – Small, pre-cooked two pound smoked ham – You’ll even have leftovers.
  • Apricot Preserves – Thicker than jam, this is the base to our glaze.
  • Chopped Garlic – I like to keep a jar of chopped garlic on hand, it’s softer and more muted in flavor.
  • Orange Juice – Fresh squeezed or Simply Orange, just not from concentrate.
  • Tequila – Whatever you may have on hand, simmering will remove most of the alcohol.
  • Smoked Paprika – Adds just a hint of smokiness and pairs well with this flavor profile.
  • Chipotle Powder – Adds a spicy kick, can substitute with cayenne.
  • Citrus – A variety of fresh citrus like oranges, grapefruit and blood orange.
  • Butter Lettuce – Tender, silky lettuce pairs well with citrus.
  • Lime Juice – About a half a lime squeezed.
  • Agave Nectar – A sweetener similar to honey, that is easily blended into liquids.
  • Smoked Olive Oil – This is a specialty item, if you can’t find it, just add the smallest drop of liquid smoke to your olive oil. A little liquid smoke goes a long way.
  • Potatoes – Yukon gold or similar potatoes work the best for this gratin.
  • Cheese – Sharp white cheddar cheese, such as Tillamook.
  • Heavy Cream – Similar to whipping cream or heavy whipping cream.
  • Fennel Bulb – Like a cross between onion and celery with dark green fronds at ends of stalks.
  • Onion – Yellow onion sliced thin.

Citrus and tequila go hand in hand and get kicked up with the addition of smoked paprika and chipotle powder, perfect for glazing this small 'dinner for two' smoked ham.

Ingredients
  

Kicked Up Tequila Orange Ham

  • 1 2 lb. smoked ham pre-cooked
  • 1 cup apricot preserves
  • 1 tsp chopped garlic jarred
  • 1/2 cup orange juice
  • 1/4 cup tequila
  • 1/4 tsp smoked paprika
  • 1/4 tsp chipotle powder

Smoked Citrus Salad

  • 1 grapefruit peeled and sectioned
  • 1 orange peeled and sectioned
  • 1 blood orange peeled and sectioned
  • 1/2 head butter lettuce gently torn into large pieces
  • 1/4 cup lime juice fresh squeezed – about 1/2 a lime
  • 1 tbsp. agave nectar
  • 1 tbsp. smoked olive oil or olive oil with a drop of liquid smoke
  • salt and pepper

Instructions
 

Kicked Up Tequila Orange Ham

  • Preheat oven to 350 degrees.
  • Combine apricot preserves, chopped garlic, orange juice, tequila, smoked paprika, and chipotle powder in a sauce pan over medium high heat. Simmer for 3- 5 minutes until starting to thicken. Remove from heat and let cool. Sauce will thicken even more when cooled.
  • Brush ham with about 1/4 cup of the sauce. Place in an oven safe pan, with a little water in bottom of pan, and cover. Bake at 350 degrees for 15 minutes per pound, brushing on more sauce intermittently while baking. Serve remaining sauce with sliced ham.

Smoked Citrus Salad

  • Stir together lime juice, agave, smoked olive oil, salt and pepper.
  • Combine butter lettuce and citrus segments. Drizzle with lime dressing. (Blood orange will stain the other fruit. Make sure to add this at the very end)

Ingredients
  

  • 2 cups yellow potatoes such as Yukon
  • 1 1/2 cup sharp white cheddar cheese grated
  • 1 cup heavy cream
  • 1/4 tsp salt
  • 1 pinch pepper
  • 1 tbsp. butter
  • 1 cup fennel bulb thinly sliced
  • 1/4 cup yellow onion thinly sliced
  • 1/4 cup fennel fronds dark green leafy ends to the bulb

Instructions
 

  • Preheat oven to 325 degrees.
  • Combine potatoes, 1 cup cheese, cream, salt and pepper in a large mixing bowl.
  • Sauté fennel bulb and onion in butter in a medium pan over medium high heat until just softened, about 3-5 minutes. Fold into potato mixture.
  • Place mixture into a small oven safe dish, top with remaining 1/4 cup cheese and fennel fronds. Bake at 325 degrees for about 90 minutes or until browned and crispy on top. NOTE: Baking at a higher temperature with make the cheese lump and curdle. This is a low heat dish.

Sweet Tea & Sage Ham accentuates the natural flavor of a spiral bone in ham, making a tender and delicious meal for your family.

Sweet & Citrusy Spiral Ham

Oh Southern sweet tea, how you look so lovely glazing my spiral ham. Really, though, just look at that beautiful golden brown coloring on this ham. The sweetness of the tea balances the saltiness of the ham and the sage?

Let me tell you about the sage. I LOVE sage. I love it for drying and smudging; I love it for cooking with; and I love it for garnishing. Sage has a strong, clean scent, but also pulls bright citrus notes as well. This is why it works in this Sweet Tea & Sage Ham. Add a few oranges and lemons to tie it all together and keep everything juicy.

All that citrus will combine with the glaze in the bottom of the baking dish and when you pull it out of the oven, you’ll want to spoon all that liquid goodness right over the top just before serving. Scroll down to see what I pair this beauty with and make it a meal PLUS dessert!

Sweet tea balances the saltiness of the ham and sage adds a nice citrus note.

Ingredients

  • 1 9 lb spiral cut ham (pre-cooked)
  • 3 cups sweet tea
  • 1/4 cup fresh sage chopped
  • 1/4 cup honey
  • 1/4 tsp smoked paprika
  • 2-3 oranges, lemon, limes halved

Instructions

  • Preheat oven to 325 degrees.
  • Make glaze by combining sweet tea, sage, honey and smoked paprika in a small pot. Simmer over medium high heat until reduced by half and starting to thicken.
  • Place ham, cut side down, in a baking dish. Set citrus around the ham in the baking dish. Brush 1/4 of the glaze over the ham, cover with foil and place in oven.
  • Bake for 10 minutes per pound, brushing with more glaze every 30 minutes. (A 10 pound ham cooks for 1 hour and 40 minutes) Remove from oven and brush with juices from baking dish. Slice and serve.

Ingredients

  • 1 lb salmon fillet
  • 3-4 variety of citrus orange, lime, lemon
  • 1/2 cup light brown sugar
  • 1/4 cup ground mustard
  • 1/2 tsp cayenne or chipotle powder

Instructions

  • Preheat oven to 450 degrees.
  • Combine brown sugar, mustard, cayenne and the juice of 1/2 of an orange in a small bowl and brush over salmon fillet (save a little to drizzle on when it comes out of the oven)
  • Slice citrus and lay over salmon. You may have some leftover. Save these for another use.
  • Bake for 10 minutes at 450 degrees, then turn to broil for remaining 5 minutes.

Citrus is a great fruit to always have on stock. It not only lasts a long time, but you can make an ordinary pantry recipe taste fresh and full of life. From sauces, salads, glazes and even smoothies, I always keep a bowl of citrus on hand.

This recipe is a simple glaze topped with blood oranges, lemons and limes. Blood oranges are my favorite, not only for presentation, but for flavor. Look for them the next time you’re at the grocery. They have a light reddish tinge to the skin.

Just 5 Ingredients

  • 1 lb salmon fillet
  • 3-4 blood oranges, limes and lemons
  • 1/2 cup light brown sugar
  • 1/4 cup ground mustard
  • 1/2 tsp cayenne

Throw out that little spice packet and jazz up your holiday ham with the flavors of citrus and spice. Bright tones of orange and grapefruit blend perfectly with smokey chipotle and give this ham the beautiful color everyone hopes for.

This Citrus Chipotle Ham will be the center of attention at your holiday table with the caramelized edges and tender juicy inside. Serve with Classic Potato Gratin which compliments this bold flavored ham with it’s tender creaminess. Complete the meal with Northern Winter Salad featuring shaved brussel spouts, hazelnuts, cranberries and Beecher’s Flagship cheese. That’s all you need, I mean, except dessert, of course!

Citrus Chipotle Ham

Ingredients

  • 1 8-10 lb bone in spiral cut ham

Citrus Chipotle Glaze

  • 1/4 cup shallot minced
  • 1 tbsp chipotle in adobo sauce
  • 1/2 cup grapefruit juice fresh squeezed
  • 1/2 cup orange juice fresh squeezed
  • 1 tsp garlic minced
  • 1/2 tsp cumin
  • 1/2 cup brown sugar
  • 2 tbsp green onions chopped
  • 2 tbsp butter

Instructions

Ham

  • Preheat oven to 275 degrees.
  • Unwrap ham, discard glaze packet that comes with the ham, place ham in a large oven safe pan and cover with foil.
  • Bake 12 minutes per pound. (My roast was 9 lb. and I baked for 1 hour and 45 minutes) You want the internal temperature to be 140 degrees. The last 10 minutes remove foil and brush glaze over the ham and in all the nooks and crannies.  Crank the oven up to 425 degrees and bake for 10 minutes. 

Citrus Chipotle Glaze

  • In a small sauce pan over medium heat cook shallot and chipotle for about 3 minutes. Add grapefruit juice, orange juice, garlic, cumin and brown sugar.  Simmer until reduced by half, about 10-15 minutes.  Add green onions and butter until melted.  Set aside until ham is ready to glaze.
